Explore the World of Craft Chocolate Each month, we’ll feature the chocolate of a single artisan small-batch producer. Included will be three or four chocolate bars that demonstrate the unique complexity of craft chocolate. These producers are intimately involved in the entire production, from sourcing (or growing!) some of the best cacao in the world, to roasting and refining, who use their expertise to create their own artistic expression of a particular cocoa bean. We love craft chocolate for the same reasons we love artisan cheese: simple ingredients handled with respect and care for people and the environment. And of course, to satisfy our taste buds! It is remarkable what complex flavors these artisans can produce from just cacao and sugar (or for cheese: milk, salt, cultures, and rennet). Mostly, we will focus on dark chocolate in this club, but there could be some milk chocolate or occasional inclusions, such as coconut or peanuts (so please let us know if you have any allergies so we can make substitutions.) Just like in our cheese case, there is a time and place for added flavors, but those are the exceptions not the rule. Available for in-store pickup only. Orders placed on or before the last Friday of the month will be available for pickup on the first Friday of the following month (subject to availability.)
